Roast Garlic & Courgette Loaf

My sister-in-law Seonag is famous for her courgette loaf with roasted garlic. After years of pleading with her for the recipe, I can finally share it! I can’t stress enough, get every little bit of liquid out of the courgettes that you can. The smell as the bread is baking will make you swoon. Try your best to let it cool a little before slicing up and smothering in salted butter.
