As a Scottish baker, there are a few recipes you need in your arsenal: shortbread, clootie dumpling, tablet and cranachan for starters. And tea cakes definitely need to go on that list!

Here are my top tips for great tea cakes: 1. Slowly melt your chocolate, it will stop it discolouring when it sets; 2. Don’t overfill your chocolate domes with marshmallow; 3. For an extra retro twist, dollop a teaspoon of raspberry jam in the middle of the biscuit before you assemble.
