There’s definitely a lemon theme to this afternoon tea! This recipe from my sister-in-law Seonag makes buttery mini tarts filled with sweet and tangy lemon curd and creamy mascarpone, and they are melt-in-the-mouth delicious.
Add the flour and ground almonds into a bowl, then sift in the icing sugar.
Add the butter, then rub in with your fingers until the mix looks like fine crumbs.
Use the milk to bind together to make a soft dough. Knead lightly and chill for 30 minutes.
