One of Sweden’s most beloved seasonal treats are Semla (Semla for singular, Semlor for plural). The day before Lent is celebrated by eating at least one of these! Semla is a bun flavoured with cardamom and filled with almond paste and whipped cream. Bake these and you’ll be booking your flights to Stockholm the next day.

Method

Add the flour, the sugar, salt and cardamom to a mixing bowl and stir thoroughly, then add the yeast and stir.

Melt the butter in a saucepan and add the milk. Heat until just warm (38°C/100°F). Add the mixture and beaten egg to the flour and stir until you get a sticky dough.
