Some cakes always receive an ‘oooh’, ‘ahhh’ or ‘wow’ from guests when I carry it to the dinner table, and my Clementine Upside-Down Cake is definitely one of them. Clementine is one of my favourite flavours of Christmas, but of course at other times of the year, you can use oranges instead.
The perfect way to make the cake is to weigh out your eggs once they are out of the shells. Then add exactly the same amount of sugar, self-raising flour and butter. The cakes should work perfect
