This dish is traditionally served by the islanders of Shetland for breakfast on New Year’s Day. What a way to start the year! Originally a Scandinavian recipe, this is a simple and luxurious festive treat. You can make it your own by adding layers of nuts, crushed biscuits or fruit compote (rhubarb would be perfect).

Whipkül is easy to prepare and best served immediately – marauding Vikings are optional!
