This is an incredibly easy loaf to make. If you think you don’t have time to knead by hand (or if you’ve just had your nails done) then fling the dough in a mixer with a dough hook for 5 minutes or so. It is delicious spread with butter and perhaps a slice of a tangy farmhouse cheese such as Orcadian Grimbister.

  • 300 g/10½ oz unbleached strong white flour, sifted

Method

Mix the flour, oatmeal and yeast in a bowl with tsp salt. Make a well in the centre and slowly pour in enough hand-hot (tepid) water (about 250–275 ml/9–9½fl oz) to make a softish dough.
