These are not, of course, scones, but they sit nicely beside cheese scones as they are more and more popular in cafes with a cup of tea or for brunch. Just as with scones, the trick is not to overmix; a light touch is all that’s needed.

As well as good cheese, I like to add either leeks or ham – or, even better, both.

The regular-sized muffins are good with soup or salad for lunch; the mini muffins are ideal as canapés with drinks.
