This is another childhood favourite – pastry, jam and a fruit-studded coconut cake mixture on top. Paradise!
For the pastry, place the flour, almonds and sugar in a food-processor, combine briefly, then add the butter and whizz until it resembles breadcrumbs. Now slowly add the egg through the feeder tube, stopping the machine the minute it starts to form clumps. Clingwrap and chill for half hour or so, then roll out to fit a lightly buttered Swiss-roll tin (23 x 33cm/9 x 13in). Prick all over and chi
