Shortbread has been made over the centuries in finger-shaped biscuits, round biscuits and a full round ‘cake’ known as petticoat tails. The origin of the name of these dainty shortbread biscuits is interesting. Some believe it to be a corruption of the French ‘petites galettes’ which is taken to mean little cakes.
