Shortbread is often referred to as shortie in Scotland, and these little two-bite biscuits, though untraditional, are a wonderful addition to the lexicon of shortbread recipes, with their light crisp texture and mustardy, cheesy flavour. They are ideal to serve as canapés with drinks.

Ingredients

  • 150 g/ oz plain flour, sifted

Method

Place the flour, cheese, cayenne and half a teaspoon of salt in a food-processor. Add the butter and whizz until it resembles breadcrumbs.

Mix the yolks and mustard, then add this with the motor running, whizzing briefly until combined.

Tip onto a large sheet of clingfilm and shape into a long roll, about 25cm/10in long. Pretend you are rolling out a long sausage with plasticene
