These easy biscuits are full of oaty goodness. They are crunchy, light and buttery, ideal to go with morning coffee or an afternoon cup of tea.

For a change, you can add a handful of raisins to make that all-American favourite, oatmeal raisin cookies.

Ingredients

  • 150 g/ oz butter, softened

Method

Cream the butter and sugars together until smooth, add the oats, flour, bicarbonate of soda and a pinch of salt. Stir until thoroughly combined, then using floured hands, roll into balls and place – well apart (they will spread) – on greased baking sheets (you will probably need two).
