Some recipes add a teaspoon of caraway seeds to the basic mixture. F. Marian McNeill suggests a mere half teaspoon for 8 oz of flour, which is pretty much the amount used here.

These traditional biscuits are eaten as they are, with a cuppa or sometimes topped with a smear of butter and a slice of cheese. They were an ideal ‘shivery bite’ (a little snack eaten to warm
