Although oatcakes are traditionally made on the girdle, I have given an oven method below, since most cooks are more familiar with baking trays than girdles. The girdle method is also given; the classic way is to cook on one side on the girdle, then to toast them on a special toasting stone in front of the fire. A brief spell in a low oven will also finish them off. The reason they are not turned over on the girdle to finish the cooking is that this would make them tough.
