Ingredients

  • greens
  • oatmeal
  • pepper
  • salt
  • cream
  • water

Method

Put into a pot as much water as will cover your greens. Remove the strong shanks (this is ‘ribbing’ them) and put them in when the water is boiling. Boil till tender, leaving them uncovered. Take them out, squeeze them free of the liquor, and chop them finely or squeeze them through a sieve. Sprinkle with oatmeal and put back into the pot with the stock.
