  • fresh herring milts 1
  • smoked salmon
  • salt
  • cayenne
  • parsley


Sprinkle some milts with salt, cayenne, and a little finely chopped parsley, chervil and chives. Wrap each milt in a thin slice of smoked salmon and poach gently in butter. Make your omelette and place the salmon rolls in the centre. Roll up and serve immediately.
