Ingredients

  • 1 tablespoon sunflower oil
  • 1 thumb-sized piece of ginger, peeled and very finely chopped

Method

Heat the sunflower oil in a pot, then add the ginger, garlic, chilli and carrot. Fry on a low heat for 5–10 minutes until they’re soft and smell good.

Pour in 1.6 litres of boiling water, then crumble in the stock cubes and add the pak choi, kale and noodles. Turn up the heat and bring ever
