This is almost posh spaghetti hoops, and it doesn’t take much longer than opening the tin and heating them up either. It uses a small pasta grain called orzo – if you can’t find this then risotto rice or 50g of small pasta would work. If you can find some fresh oregano then pick the leaves off a few sprigs instead of using dried.

Ingredients

  • 1 tablespoon olive oil or butter
  • 1 onion, peeled and diced into 2 cm cubes

Method

Heat a pot on a medium heat and add the oil or butter. Fry the onion, garlic, carrot and celery for 5–10 minutes until they soften.

Add the roughly chopped tomatoes along with the orzo and oregano, and mix everything together.

Pour in 1.2 litres of boiling water, crumble in the stoc
