This is a handy veggie soup for using up those wrinkly peppers or soft leeks at the end of the week.

Ingredients

  • 1 tablespoon olive oil or butter
  • 1 leek, washed and finely chopped
  • 1 small

Method

Heat a pot on a medium-low heat and add the oil or butter. Add the leek, pepper and garlic and then fry for 5–10 minutes until they soften.

Mix in the broccoli, potato and grated ginger and continue to cook for 2 minutes.

Pour in 1.2 litres of boiling water, crumble in the stock cub
