Heat a pot on a medium-low heat and add a tablespoon of oil or butter. Fry the onion and garlic for 5–10 minutes until soft.
Meanwhile toast the spices in a dry frying pan for a few minutes until they start to release their smell. Stir them into the onions and garlic.
Add the roughly chopped tomatoes, apricots and lentils to the pot, and stir it all well.
