You could add some boiled rice to this soup after it’s been blended to bulk it up a bit – either way it’s good.

Ingredients

  • 1 tablespoon olive oil or butter
  • 1 onion, peeled and diced
  • 1 sweet pot

Method

Heat a pot on a medium-low heat and add the oil or butter. Fry the onion, sweet potato, carrot and celery on a low heat for 10 minutes.

Add the apple, tomato and curry powder to the pot, giving everything a stir.

Pour in 1.2 litres of boiling water and the crumbled stock cubes, and then bring to the boil.

Turn down the heat and simmer for 20 minutes.
