Halve the onions lengthways and slice them from tip to root. In a large frying pan, heat the oil and butter over a medium heat, add the onions and stir to combine. After 5 minutes the onions will have started to soften nicely; add the rosemary and salt and turn the heat down to low. Stir occasionally to prevent sticking, and if they catch add a tablespoon or two of water to loosen and incorpora
