Cherries taste so amazing in this salad that I make sure to buy frozen fresh ones when they’re no longer in season and difficult to find in the shops. That way I never run out.


  • 250 g brown rice, rinsed well
  • ² tsp salt
  • 50 g


Put the rice in a saucepan with 500 ml water and the salt, butter and saffron and simmer, covered, for 40 minutes. When done, turn off the heat and leave to steam with the lid on for 10 minutes before transferring to a large bowl and fluffing with a fork.
