Sumac is the cornerstone of this traditional Middle Eastern bread salad. Don’t be tempted to substitute as it’s got this incredibly distinctive sour, lemony flavour.
Make the dressing by whisking together the oil, pomegranate molasses, sumac, lemon juice and salt, and brush it on one side of each pitta (or use your fingertips), reserving the leftover dressing. Grill the pitta (on the dressed side)
