This is a really delicious way to enjoy green beans. I’ve blanched them here for some sweet crunch, but you could easily toss them in oil and blister them in a hot pan. Try adding toasted walnuts or crumbled feta to this salad if you feel like changing things up a bit.


  • 500 g green beans, trimmed
  • salt


Cook the beans in a large pan of salted simmering water for 3 to 4 minutes, then drain and refresh briefly under the cold water tap to stop them cooking. Drain well to ensure you don’t add water to the dressing.

To make the dressing, add the mustard, lemon zest and juice, oil, honey or maple syrup, garlic and salt and pepper to a large bowl and whisk for about a minute, until emulsified
