Smashing cucumbers isn’t just gratuitously violent fun; the light dressing clings to the newly bashed craggy interior. This salad improves with an hour or so of resting in the fridge, so it’s cold and intense when you eat it – ideally, with Sesame Miso Noodle Salad.
Make the dressing in a wide shallow bowl by whisking together the vinegar, soy sauce, oil and garlic.
