A beautifully exotic-looking lime green fractal, romanesco is a cousin of the cauliflower but slightly sweeter and less peppery. Choose a tight dense head when selecting. Its crisp leaves could also be chopped and added to this salad. Dukkah would be delicious sprinkled over the crème fraîche here.

Ingredients

  • 1 medium romanesco, trimmed
  • 2 tbsp extra virgin olive oil
  • 1 tsp

Method

Preheat the oven to 200°C/180°C fan. Pull the romanesco into florets and chop the stalk. Transfer to a large roasting dish and toss in the oil and salt then dot over the butter. R
