Don’t forget to include the stem of the cauliflower here so nothing is wasted – it’s all delicious. Roasting the cauliflower really brings out its wonderful flavour. You can crush the whole coriander seeds in a mortar and pestle if you prefer – my tastes are rustic so I don’t bother.
