While the standard pickling brine is great for most things, sometimes a sweet pickle is desired. I like to use this pickle brine for things like dried currants, unripe green strawberries, or papaya salad. This type of pickle is great alongside spicy foods. It’ll be a crisp, refreshing accompaniment.

Combine all the brine ingredients together in a small saucepot. Bring to a boil over medium-high heat, then allow to simmer for 5 minutes.

While the pickling brine is simmering, prepare your fruit or vegetable to be pickled. Pack the vegetables in a glass jar or food-grade plastic container. When the pickling brine is finished simmering, pour the brine over the vegetables. Cover with a
