This Vegetable Stock is our go-to recipe, and because you don’t have to peel the onions or carrots, it’s a great way to reduce waste. We go through a ton of vegetables every day and we often save our carrot peels and onion trim for this recipe. You can save your vegetable trim in a gallon-sized freezer bag and add scraps to it until the bag is full. Just be sure they’re washed well beforehand. Then, it’s as simple as throwing them into a pot with some herbs and spices.
