Chimichurri, an outrageously bright and herbaceous sauce originally from Argentina, is one of those sauces that seems to make just about anything better. It’s very versatile and especially lovely on grilled vegetables, like Grilled Zucchini with Mint Pesto or used as a marinade, like in the Tofu & Vegetable Brochettes with Chimichurri.
