This pesto is a wonderfully bright twist on the classic Genovese Pesto (basil pesto) that is particularly beloved in the spring and summer months at Greens. A dollop of this pesto in a soup or added to a vinaigrette is simply wonderful, and it is a handy sauce to have on hand for pastas and veggies off the grill. This pesto also freezes well! I often freeze it in ice cube trays so that I can pull out a tablespoon or so at a time for when I want that extra burst of flavor.
