Baby artichokes are a springtime marvel, and if you’re lucky enough, you might be able to find some in the fall as well. Fresh baby artichokes are much easier to clean than fully grown artichokes because their leaves are still quite tender, and they have not developed the fuzzy inner choke yet. That means with a little patience, you could prepare these baby artichokes even on a weeknight. Serve with your favorite sauce, although I highly recommend Lemon Chive
