At Greens, we always have a “griddle cake” of some sort on the menu, which, of course, varies seasonally. A few summers ago, I took a particular interest in the American South since the summer just begs for okra and corn. We discovered that the original recipe for “hoe cakes,” or johnny cakes, was less of a pancake and more of a cornmeal mush, almost like polenta, that was then griddled on the back of a hoe, hence the name.
