Shumai is one our favorite dumplings to make at Greens because they are delightfully easy to prepare and don’t involve complicated folding methods. And, since shumai filling is exposed on the top, you don’t have to worry so much about overfilling your dumplings. We also, of course, like to tinker with this filling seasonally, so if instead you’d like to make these in the spring with morel mushrooms, or with hen-of-the-woods in the fall, have at it!
