This couscous salad is inspired by the flavors of Northern Africa, while also celebrating the marvel that is the California artichoke. Most of the artichokes grown in the United States come from California, and if you are lucky enough to visit a springtime farmers’ market, you’ll see stands flooded with artichokes of all shapes, sizes, and colors.
