This is one of the simpler soups in this book, but that doesn’t mean it lacks in flavor. I first made this soup back when I was a sous chef. I remember that it was a particularly busy day, and before I knew it, I only had about 30 minutes to make soup before we opened for dinner, and the only two things in our refrigerator that I had extras of were chickpeas and kale. With those, plus some other staples, I ended up creating one of our most requested recipes to date!
