Cream cheese may seem like an unorthodox addition to this soup, but its tartness and creamy texture is the easiest way to achieve a perfectly balanced soup. Butternut squash is my favorite squash to use for this soup, since it’s naturally more moist than other varieties and lends itself well to soups. However, any winter squash would be delicious here, from kabocha to red kuri. Choose your favorite and enjoy.
