These little empanadas are a mainstay on our special events menus. I remember the first time I tried them, nearly ten years ago, and I still love them to this day. The mixture of sweet corn, cheese, charred poblanos, and smoky grilled onions is so summery and delicious! My favorite way to enjoy these is by deep-frying them, but baking them will still yield lovely, crisp empanadas. These are excellent for entertaining or can be a fun snack to make on the weekends.
