This galette hits all the right notes. It’s flaky, buttery, and has just the right amount of funky cheese to make the Brussels sprouts sing. Not to mention the winter herbs and caramelized shallots add a wonderfully festive note to make this dish a gorgeous centerpiece at a holiday table. The shallots take a bit of preparation time, but it’s worth the effort. In a pinch, you could also substitute an equal amount of sliced yellow onion.
