Of all the “all-star” ingredients that appear in the summer months, zucchini is one of the most versatile. Its subtle flavor and unique texture grants zucchini a wide array of cooking methods and flavor profiles. One of my favorite ways to prepare zucchini is to grill it over high heat to char it, while cooking it just enough so that it is tender but not mushy, charred but not burnt. The mint pesto adds a cool, refreshing flavor that is at once surprising and familiar.
