Blistered Shishito Peppers

Shishito peppers, nicknamed “Russian roulette” peppers, are a wonderfully thin-skinned, and usually mild pepper, though like the name suggests, one out of every dozen or so will be fiery hot. Despite this spicy challenge, shishitos are one of the best peppers to snack on because of their thin skin. They blister beautifully and are juicy, a little sweet, and vegetal.
