This polenta makes an outstanding accompaniment to savory entrées, like Wild Mushrooms “Au Poivre,” and can elevate simple side dishes to full meals, like with the Stewed Romano Beans in Arrabiatta. This polenta is meant to be served soft, but you can also cut the water by 1 cup (8 ounces/237 ml) and let it firm up on a baking sheet overnight for grilling or pan searing.
