Manicotti is one of the most magical dishes in the world, if you ask me. Similar to cannelloni, manicotti comprises crêpes that are filled and rolled, then topped with a sauce. I have fond memories of my grandmother making a stack of crêpes so high, you could hardly see the woman behind them. She would fill them with a simple mixture of ricotta, Parmesan, and some basil and then top with “gravy,” our family’s word for tomato sauce. This version of manicotti trades the tomato for a creamy bé
