Greens loves gratins. There are many gratin recipes in our archives, and even more that have been published in our previous cookbooks. It was one of those items that I could always expect on the menu when I was a young line cook. We would make the Gratin Provençal in the summer months and our Southwestern-Style Gratin with sweet potatoes and chipotle in the fall. We still love making versions of gratins at Greens but have updated from the very ’80s-esque ring molds to cozy ceramic crocks. T
