If you know Greens, you know the tofu brochettes. It is one of the few dishes that has remained on the menu almost consistently for 45 years. Even one of our kid’s coloring pages shows a woman making the skewers in the kitchen (which, I recently found out, is based on a real photo from the early ’80s).
