Risotto is a wonderful option for vegetarian dinners not only because it is rich and filling, but also because it is a wonderfully versatile dish that is easier to make than one might think. While it’s typical to add the vegetable stock in multiple additions, I discovered that it really isn’t all that necessary. As long as you stir the risotto while it slowly cooks, you can add all of your vegetable stock at once! Just be sure to add the creamy ingredients, like heavy cream, after the rice
