Ingredients

  • 100 g Castor sugar
  • 100 ml Water

Method

Mix together the sugar and water in a heavy-based saucepan and stir until dissolved over a medium heat. Skim off any scum that rises to the surface. Pass through a fine sieve into a clean bowl and allow to cool. Store the sugar syrup in a sealed container in the fridge.
