Lime Sorbet

Wash the limes, grate the zest and place in a heavy-based saucepan with the sugar syrup. Bring to the boil and reduce to a simmer for 2 minutes. Remove from the heat and cool, allowing the zest to infuse the sugar syrup. Cut the limes in half and squeeze out the juice. Measure 225 ml. lime juice and add it to the water. Pass the zest-infused lime syrup through a fine sieve into the lime juice and water and whisk. Transfer to an ice-cream machine and churn until firm. Place in a container and freeze.
