Feta, spinach and filo pastry are an unbeatable combo. These might seem a bit of a faff to make, but they’re really very easy and rather impressive when piled up on a plate.

Ingredients

  • 150 g fresh spinach
  • 6 spring onions, trimmed and thinly sliced

Method

Preheat the oven to 200°C/180°C fan.

Fill and boil your kettle, then place the spinach in a large colander in the sink. Pour the just-boiled water over the spinach until it has wilted, then set aside to cool slightly. Once cool enough to handle, pat the spinach dry with kitchen
